Tomato Salsa
2 kg tomatoes
2 dl olive oil
1 whole garlic, peeled into cloves
A large handful of fresh basil
1 ½ -2 Tbsp. coarse salt
Granulated Glass
Cut the tomatoes over if they are large, Distribute them in the jar, so they are completely full.
Press the tomatoes well. Prop basil and garlic along the sides, sprinkle with salt, pour olive oil over and screw the lids almost entirely on. If you use the right patent glass with rubber tubes they must be closed.Put the filled glass in the oven at 110 degrees and let them stand untill they look like boiled tomatoes(around1,5 hour) . Take out the glasses and screw on the lid tight.. Put them back in the oven and let cool. Patent Glass is just standing in the oven until they have cooled.
PLUM JAM
So I tried a new way of making plum jam and this was really easy & Tastyyyy;-)
The recipe is for one jar, since i didn't know how it was going to turn out..
1 kg of plums split in half
0,5 kg of sugar
1-2dl of captain morgan dark rum
cinnamon
Heat up the owen to 150 degrees celcius & Mix all the ingredients together in a roasting pan.
Have it in the owen for around 1-1,5 hour ,don't forget to stir it around.
Heat up the glass before you put the jam in it to ensure the durability.Let it cool down before you put it in the fridge,,,Enjoy;-)

T-bones
So this is my first time laying down something here, so I figured I start with something I'm very familiar with... Bar-b-que'd Beef :-)...T bone steaks here in Sweden are quite rare, you may see them in the markets (salu hall) in the big city, or at a fancy restaurant, but it is most likely that you will not be able to find them at your local grocery store...if you do please let me know where that store is.
Anyway earlier this summer I managed to find a butcher who will cut the meat as I like, (Incidentally the meat is also grass fed and Krav marked) well that sounded exciting, so I had a bit of research to do so I could accurately describe what it is that I wanted, mainly because they didn't exactly know what a t bone steak was, and to be honest before all of my research, I just thought it was a big tastey steak, with a 'T' shaped bone in it... duh.. As it turns out a t bone steak is acutally 2 steaks in one, one side the larger is called the 'new york strip', or the strip loin, and the smaller piece comes from the tenderloin.
As you can see in the pic to the left there are clearly 2 pieces of meat separated but the t shaped bone. The only catch to me ordering this steak was that I had to buy that part of the cow, both the tenderloin and the strip loin, all cut up the pile of steaks weighed in at a hefty 8.5kg is quite possibly the single largest beef purchase I've made in my 36 times around the sun...
Now how to cook a tbone...
Cooking the t bone can be a bit tricky as it is actually 2 different cuts of meat which are of different densities, in other words one side cooks faster than the other. If you like a medium rare steak the smaller section will end up well done if your not careful.
I use a charcoal grill, I usuall set up for direct grilling but I'll set my pile of coals mostly to one side of the grill, this allows for a slighty cooler side. I place the steak over the coals trying to keep the smaller side over the cooler section of the grill. The steaks shown in the picture weigh in anywhere between 600 - 800g, which is a bit of a monster, they take about 10-12 minutes for a rare to medium rare steak. As far as seasoning or flavouring the steak I use black pepper and sea salt. This is a tastey steak, but I think my new favourite steak might be skirt steak, but more on that another day.....
thats all for now!

Our Kitchen...Outside

Deadeasy Bread to make;-)
Wanted to share my recipe on white bread..I usally make this but add whatever I feel like putting in it,for exempel sundried tomatoes, dried fruit, olives in this one I had some sunflower seeds and flaxseed.
Recipe for 2 loaves of bread.
1 pack of yeast(50g)
1,6 liter of flour
12-14dl of water(38 degrees)
1 tablespoon seasalt
1 tablespoon sugar
brush with one beaten egg and add seasalt on it after;-)
Measure the flour, salt, sugar and put it in the mixer.
Than put the yeast in another bowl and add the 38degrees Celsius warm water & stir until the yeast is dissolved, start the mixer & poor in the warm water with the yeast slowly & let the maskin work the dough for 10 minutes or so..Let it sit and rise for an hour in a warm place.Preheat the oven to 180 degrees Celsius.
When the dough has risen to double its original size, gently punch it down and turn it back out on a lightly floured surface. Flatten and shape the dough into a rectangle, then cut it into two equal strips.Brush the egg glaze over the top of the bread and add the seasalt, Bake in the oven for 30 minutes and let cool.Good Luck"Lycka till"

Cod Cheeks
Im not shore if you can buy this in the store here but you can always order it;-)I was lucky to be able to buy some from my grandma's neighboor thats a fisherman in Norway,,Don't have a recipe but this is what i did,,
1.Dip the cod in flour mixed with salt & pepper
2.Fry the cod in butter and then put it in another pan together with some fried leek, coctailtomatoes, red pepper, fish broth, cream & milk and let it boil for 15-20 minutes
Serve it with some fresh potatoes!
From the garden..
This is something we use alo't in the autumn together with a good Moose steak or a stew,,
Red Currant Jelly Recipe
1 liter of Red Currant & 6dl of Sugar
1.Pick and wash the berries and boil them in a jam pot with just enough water so it won't burn
2.Simmer until berries have released themselves from all the juice and strain it all through a jelly bag or piece of cheesecloth.
3.Heat the juice to boiling in the saucepan and heat together the sugar in the oven - to 6 cups sugar 6 dl juices. Pour the hot sugar in fruit juice and boil vigorously until the gel begins to settle, but not more than 20 minutes. If you let the jelly boil for a long time when the sugar is well appointed and darkens it loses both its beautiful appearance and taste. If you have reason to suspect that the juice is the thinnest team and not concentrated enough, so reduce it in about 10 minutes,
add sugar...Good Luck
